Grapefruit and strawberry ice cream

We all deserve a treat every now and again, but who says all the good stuff has to be unhealthy?

This recipe from Ultimate Paleo Guide gives you that much-needed cheat dish, while keeping it full of nutritious ingredients.

It has plenty of tasty fruit packed with vitamins and minerals, and there’s even a good dose of coconut milk for some added healthy fats.

It’s perfect for those with a sweet tooth, so why not give it a go?

Cook time: 20 minutes

Ingredients

2 bananas, sliced then frozen

400ml coconut milk

1 grapefruit, juice and zest

300g frozen strawberries

3 tbsp honey


Preparation

  1. Take the bananas, coconut milk, grapefruit juice and grapefruit zest, then put them in a blender. Blend until smooth.

  2. Add the strawberries and honey, then blend again until smooth.

  3. Put the mixture in a container that’s freezer-safe, and keep it in the freezer overnight.

  4. Serve on its own, or with your favourite dessert.



Tips

Vegan: To make this dish vegan, just switch the honey for a vegan-friendly alternative.

To store: Once the ice cream is ready, keep it in an airtight container in the freezer for up to 2 months.
