Mango and Passion Fruit fool Recipe

Ingredients

3 ripe mangoes

3 passion fruits

245g yoghurt

Juice from 1/2 a lime

Preparation


  1. Peel the mangoes, put two of them in a blender and purée them. Dice the final mango and leave it aside for now.

  2. Cut the passion fruits. Make sure you scoop out the juice and seeds and put them in a glass.

  3. Combine two-thirds of the passion fruit juice with the mango purée you created - leave the other third of passion fruit juice aside for now.

  4. Add the lime juice to your passion fruit and mango purée, and mix everything thoroughly.

  5. Take four glasses and put a scoop of yoghurt in each. Next, add a layer of the fruit purée on each. Add another layer of yoghurt, then finish with the remaining purée.

  6. Cover all the glasses and let them chill in the fridge for 1 hour.

  7. Finally, top each with the diced mango and the final third of passion fruit juice that you set aside earlier, then serve.


Tips

Vegan: To make this dish vegan, try using vegan-friendly yoghurt.

To store: Once the desserts are ready, make sure they’re covered, then keep them in the fridge for up to 3 days.
