Prep time: 20 minutes + cooling time
Put a metal baking dish in the freezer.
Put a pot over a medium heat then add the water and sugar. Stir regularly until the sugar dissolves.
Remove the pot and let the mixture cool to room temperature.
Add the lemon juice and zest. Mix well.
Take your dish out of the freezer, pour in the mixture, then put it back in the freezer.
Take the dish out of the freezer every half an hour and stir the mixture thoroughly with a whisk.
The sorbet should be completely frozen after around 4 hours. Transfer it to an airtight, freezer-safe container, then put it back in the freezer for storing.
To store: Once you have made the sorbet, put it in an airtight, freezer-safe container and keep it frozen for up to 1 month.
